Home Cooking: My Grandmother’s Rice Stuffing Recipe

The holiday season is just around the corner—a time for fun, family, and of course, food.

As your prepare those special holiday meals, Nash Disability Law Hearing Case Manager Gina Riemma offers a delicious departure from the usual bread stuffing with this treasured rice stuffing recipe handed down from her grandmother.

4 cups instant rice
8 cups water
2 lbs ground beef
1 onion, chopped fine
2-3 buds garlic, minced
4-5 sprigs fresh parsley, chopped
2 cups Romano cheese
Salt and pepper to taste
2 eggs beaten
Turkey broth about 1 cup

Cook rice with the 8 cups of water, according to package directions. Brown meat in skillet, adding onions, garlic and parsley toward the end to cook together. Add seasonings. Mix the rice and meat together and let cool. Beat eggs and add turkey broth. (If you make turkey broth, add eggs slowly so they don’t cook and stirring all the time to stop eggs from cooking) Add egg/broth, cheese to rice mixture, mix well and stuff turkey. Remaining stuffing may be placed in casserole dish and bake separately, baste a few times with extra turkey broth.
