Home Cooking: Betsy Olesker’s “One of Each Cake.”

Birthdays are nature’s way of telling us to eat more cake. But you don’t have to wait for a birthday to enjoy the sweet satisfaction of a piece of cake. Cake lover and Nash Disability Law Intake Case Manager Betsy Olesker says any time is a good time to dig into this easy-to-make, easier-to-eat dessert.

One of Each Cake

Mix together:
1 cup sour cream
1 teaspoon baking soda

Mix together lightly
1 cup sugar
1 egg
1/4 cup butter

Sift
1 cup cake flour
(Substitute: 1 cup all purpose flour minus 2 tablespoons, add 2 tablespoons corn starch and sift together 2 times)

Butter and flour 8” x 8” pan

You can add shredded coconut, blueberries, diced peaches or apples or pineapple to the batter) Place some fruit on top and when the cake rises it will surround the fruit in a pretty pattern.

Preheat oven to 350F and bake 45 minutes or until inserted toothpick is clean when removed.
